Savory Porridge

This is a no shopping, no reading recipe. All it requires is rooting around on your shelves for items you already have – things that will thicken – and an approximation for the correct amount of water.

Examples of thickening grains; rice, quinoa, oats, bulger, and couscous

For the water to grain ratio, it’s about 2 to 1. Two cups of water for every cup of solids.

When I make this, I place the dry items in a pot, then eyeball the water to cover it.

Here’s what I included with this batch.

Quinoa blend. This thickening grain comprised the bulk of the mixture.

Since lentils are thicker than the quinoa, the cooking time was based on these.

If using a bouillon base, calculate the amount to coincide with the amount of water used.

Heat on medium, stirring occasionally.

Taste test for doneness.

*Tip: If the grains still need more cooking time as the water begins to evaportate – add more.

 

Leek & Potato Soup

1 cup leeks – chopped – sautéd in 2 tblsp. bacon drippings
4 cups water
1 bay leaf
2 tblsp. catsup
2 cups potatoes – chopped
1 small onion – chopped
1 stalk celery – chopped
1 bunch fresh parsley – chopped

salt & pepper to taste
sprinkle of paprika

1/2 to 1 cup lemon roux

to water add, leeks, bay leaf & catsup – simmer for 20 minutes
add remaining ingredients – bring to boil – reduce heat once potatoes are done.

add roux or other cream sauce

top with home made croutons & a splash of cilantro sauce

Stuffed Sweet Potaotes

This is a family (especially kid) pleaser! A yummy comfort food for a cold, rainy night.

Baked Sweet Potatoes

Hollow out potato – leaving enough inside the ‘shell’ to support the structure.

In a pan, saute

2-4 tbslp. olive oil
with 2-3 cloves garlic – chopped
and 2 large carrots – julienned

once carrot are softened
add 2 small zucchini – julienned
3 green onions –  chopped fine
3-4 medium sized tomatillos – chopped fine (if you like a tart flavor…add more!)
remove from heat once zucchini has softened

*may also add meat for protein – in this recipe, I added chopped ham

line the bottom of the potato with shredded Kerrygold Dubliner cheese
fill with sauted vegetables then top with more cheese
